Sourdough is an ancient type of bread which has recently risen in popularity. Some people consider it to be tastier (we certainly do!) and healthier than traditional bread. Sourdough uses an old form of bread leavening which relies on a mix of wild yeast and lactic acid bacteria that are naturally present in flour, rather than baker's yeast, to leaven the dough - some people claim this makes it easier to digest. This takes longer than many mass manufactured loaves which creates its amazing texture and taste. It is still hugely popular in the Mediterranean and Middle East. Ours is baked daily in Farringdon by a fantastic family run artisan bakery.
